In a saucepan, over a moderate flame, heat the milk without boiling it
In another saucepan, melt the butter and add the sugar
Stir with a whisk until it blends
Chop the chocolate with a knife, rather coarsely
Add the chocolate to the butter pan. Melt over medium heat, stirring with a hand whisk
When the mixture is fluid, add the sifted flour and mix with a whisk so that no lumps form
Pour the hot milk slowly, stirring with the whisk.
Add the gelatin (Optional)
Cook the pudding for a few minutes until it begins to thicken.
Remove from the heat as soon as it begins to compact: as it cools, it will thicken completely.
Wet the pudding mould and immediately pour the mixture inside
Leave the pudding to cool to room temperature, then place in the refrigerator for at least 3 hours
Unmold the budino and cover the top with the whipped cream.
