Brown base sauce (sometimes called sauce demi-glace) is the name given to a dark base sauce that can be prepared with brown stock. It is used as a base in making many different sauces.
Ingredients:
60 gr. butter
860 ml stock
3 shallots, finely chopped
60 gr. flour2 tbsp chopped soup herbs

Method:
Heat the butter and flour together. Cook, stirring constantly until mixture has browned.
Gradually add the stock and bring to a boil, still stirring continually.
Add all the other ingredients and cook until thickened and bubbly.
Strain through a sieve.
