Branne Grundsauce - Brown Sauce

Brown base sauce (sometimes called sauce demi-glace) is the name given to a dark base sauce that can be prepared with brown stock. It is used as a base in making many different sauces.


  • 60 gr. butter

  • 860 ml stock

  • 3 shallots, finely chopped

  • 60 gr. flour2 tbsp chopped soup herbs

  • Salt. and pepper

  1. Heat the butter and flour together. Cook, stirring constantly until mixture has browned.

  2. Gradually add the stock and bring to a boil, still stirring continually.

  3. Add all the other ingredients and cook until thickened and bubbly.

  4. Strain through a sieve.
